Mainly focusing his cuisine on Mediterranean fusion, Cosattini built his career in many famous restaurants across Italy, France and Great Britain, as well as Japan and the United States, many of which have gained Michelin stars. One of the many dishes of the menu created by Cosattini is his signature dish - Risotto mantecato, combined with saffron, beef cheeks, smoked goose breast, amaretto and arabica powder.

Kempinski Adriatic is located in the Istrian region, near the charming fishermen’s village of Savudrija and less than 10 km away from the town of Umag. Surrounded by picturesque olive groves and vineyards, this secluded paradise enjoys breathtaking views over the Adriatic Sea, offering ultimate comfort and privacy. Restaurants Dijana and Kanova with spectacular Adriatic Sea views, the elegant lobby bar with an outdoor terrace, and the poolside and beach bar, feature a diverse selection of fine dining and casual lunch or dinner menus.


At the entrance to Restaurant Dijana, named after the Roman goddess, there is a wine display highlighting the best bottles the hotel’s wine cellar has to offer. The comfortable, high-backed benches and padded armchairs are upholstered with bright, striped-pattern fabrics and the impressive square-coffered ceiling glitters with Swarovski crystal lights. Golden pillars and wall panels accentuate the crystal icicles hanging from the ceiling. The menu features Mediterranean cuisine including grilled meat and fish, as well as black and white truffle specialties prepared with excellent local olive oil. The Istrian region, famous for the prized white truffle, also produces excellent wine, ham and cheese.

Located on the top floor of the conference center, restaurant Kanova is a fish and seafood restaurant with a modern twist. Not only is the food top-notch but also is the ambiance with its candlelit tables and views of the Adriatic Sea, making for an unforgettable experience. The restaurant’s terrace offers enjoyable and romantic views of the Croatian, Slovenian and Italian coastlines, all the way up to the outskirts of the Venetian lagoon. Kanova presents modern Istrian-style dining, offering local dishes using seafood, meat, olives, cheese, herbs and spices.
